When you have a lot of fruit left in your fridge and don't know what to do with them,here is a healthy salad with chickpeas and tangy spices.This recipe uses Dragon fruit usually found in Asian markets.
Preparation time: 20 minutes
Serves:6
Ingredients:
1 cup dry chickpeas(soaked in water overnight)
1 dragon fruit diced
1/2 cup diced onion
1 cup cilantro
1 cup mint leaves
2 teaspoons chaat masala
2 cloves garlic
2 fresh green chilies
2 teaspoons dhaniya/coriander powder
1 teaspoon tamarind paste
1/2 teaspoon amchoor powder
1 cup pomegranate arils
1/4 teaspoon black pepper powder
Salt to taste
Procedure:
1.Pressure cook the garbanzo beans for 2 whistles with salt and let cool and drain.
2.In a bowl add the dragon fruit, pomegranate, onions, garbanzo beans and mix.
3.Blend the rest of the ingredients together to a coarse paste.Mix it with the chickpeas and fruit mixture. Add salt and pepper to your taste.

You can also add some toasted pecans or walnuts
Any tropical fruits like mangoes, pineapple etc also work well with this recipe.
You can make a Mediterranean version of this with feta, tomatoes, cucumbers, dill etc and a Mexican version of it with corn, avocado, tomato etc.
